How do I get that drop-down menu thingy that I have seen on other people's sites? I want to have the text menu that shows up when people click Gallery/Portfolio/Artwork on my website.

Just go to the "NEW SKINS: Customize your own HTML Template" section of the Control Panel, then click the pink button for the Navigation options. The Menu and Mixed modes are what you are looking for and are clearly described in this section or the above Help entry "What are the different Navigation options on the Customizable HTML skins"?
